An almond with its own identity
Mallorca Almonds have a Protected Geographical Indication (PGI), recognised since 2014. This protection is linked to the origin of the almonds and to their particular characteristics.
Almonds have historically played an important role in Mallorca, both from an agricultural and gastronomic point of view.
They are used in many of the island’s traditional recipes: nougat, almond biscuits, ice cream, almond milk, sauces and, of course, the famous Mallorcan gató.
What makes Mallorcan almonds special?
Their fat content and aromatic profile help create dishes with a particularly pleasant texture and a deep, distinctive flavour.
In pastry, they make it possible to achieve moist and aromatic desserts without the need for large amounts of flour.
What is almond gató?
Mallorcan almond gató is a traditional cake made mainly with almonds, eggs and sugar.
Traditionally, it is served with ice cream, especially almond ice cream, creating a delicious contrast between the soft cake and the cold, creamy texture of the ice cream.
Mallorcan Almond Gató Recipe
Ingredients for 8 people
- 250 g ground Mallorca almonds
- 250 g sugar
- 6 eggs
- Zest of 1 lemon
- 1 teaspoon cinnamon
- Butter for the cake tin
- Icing sugar for decoration
Preparation
- Preheat the oven to 175 ºC and grease a round cake tin.
- Separate the egg whites from the yolks. Beat the yolks with the sugar until you obtain a creamy mixture.
- Add the ground almonds, lemon zest and cinnamon.
- Whisk the egg whites until stiff peaks form.
- Fold them gently into the mixture.
- Bake for approximately 35–40 minutes, depending on the oven and cake tin.
- Leave to cool completely, remove from the tin and dust with icing sugar.
