Olives as part of Mallorcan tradition
Mallorca Olives are a traditional product of the island and are protected by a Protected Designation of Origin (PDO).
There are three traditional presentations: green, cracked green and naturally black or dried olives.
The native variety and the different preparation methods give these olives an important role both as an appetizer and as an ingredient in traditional recipes.
What makes Mallorca olives special?
One of their most recognisable characteristics is their personality. Mallorcan olives can have a predominantly bitter flavour and a smooth, almost creamy texture, both of which are part of their gastronomic identity.
They can be enjoyed simply as an appetizer or used in salads, stews, sauces and many other dishes.
Pa amb Oli: simplicity transformed into gastronomy
Pa amb oli is one of the simplest yet most representative dishes of Mallorca.
The traditional version begins with a slice of bread rubbed with tomato, then finished with olive oil and salt and served with olives.
From this basic preparation, different ingredients can be added depending on the area, family tradition or personal taste.

The secret lies in the ingredients
Pa amb oli demonstrates something fundamental in gastronomy: when the ingredients are good, there is no need to overcomplicate a recipe.
Good bread, a ripe tomato, quality olive oil and good olives can create an extraordinary experience.
Gourmet cuisine is not always about using exotic ingredients. Very often, it is about knowing how to select, combine and respect the products that are close to us.
