Ingredients for 4 People

3 medium potatoes.

1 large aubergine.

1 courgette.

1 red pepper.

400-500 g crushed tomatoes or homemade tomato sauce.

2 garlic cloves.

1 bay leaf.

Extra virgin olive oil.

Salt.

Black pepper.

Mediterranean herbs, optional.

Method

Cut the potatoes, aubergine, courgette and pepper into similarly sized pieces.

Lightly salt the aubergine and leave it to rest for a few minutes. Pat it dry before cooking.

Cook the vegetables separately so that the texture of each ingredient can be controlled. The traditional method uses frying, although a lighter version can also be prepared by roasting the vegetables.

Prepare a tomato sauce with garlic and bay leaf over a low heat until concentrated and well balanced.

Assemble the tumbet in layers, beginning with the potatoes and continuing with the remaining vegetables.

Cover the vegetables with the tomato sauce and finish the dish in the oven so that the flavours come together.
